A Day in the Life of Tomas Guillermo, Waiter at Hatch & Sons

What do you do, and how did you get here?  
I like to consider myself a well-rounded employee, I always like to be able to do everything on the job, just in case I have to fill in and help any of my colleagues. One day I might be working as a waiter, another day I’ll be on kitchen and another I’ll be working as as barista. My experience in Hatch & Sons first began two years ago, before then I was in the UK getting my Civil Engineering Degree. Afterwards, I began an unpaid internship here in Dublin so I decided to find a paid job as well, that’s when I discovered Hatch & Sons.

How do you spend your day? 
My day mainly consists of serving and having chats with customers when I am assigned as a waiter. When I am doing kitchen for the day, I do a lot of quality control, making sure everything is fresh and up-to-date. It’s all about putting love into the food because it really does show when you are passionate about what you do. As a barista, its a lot of quality control and patience. I usually want to give every customer a wonderful coffee experience, which surprisingly many have never had before. Making sure the timing, texture and portion size are right is key.

What’s the best part of your job? 
There are two things – customer satisfaction and working with a great team. When you hear customers say things like “Wow, that was great!” or ” That was delicious”, it really makes you feel good about what you’re doing. For me it pushes me to do better so that I can further improve customer experience. Working in a good team is another great part of this job. Knowing that I have a great support system – both from restaurant staff and head office – really helps me achieve my potential .

What’s the hardest part of your job?
The hardest part of my job is sometimes being too busy to help out a colleague. I’ve learned that I cant do everything at once and that some things require more time and patience.

What traits are ‘must haves’ to do your job well?
You need to be sociable, patient, good at multi-tasking and have excellent attention to detail. As well as that, you need to be a team player who is driven and passionate with good knowledge of food and drink.

Any advice for people applying for a job like yours? 
When you come into Hatch & Sons, come wearing your biggest smile. Think positive and know that you have a great support system that is there to help you from day one .

What’s your ultimate goal in your career?
My goal is to some day work at the head office so I can have a greater impact on the growth of the company. Hopefully as an accountant once I am fully qualified.

How do you unwind after work? 
After the day is over and the doors are closed, we all listen to some music while we are cleaning up and we talk and laugh about the good and bad moments of our day. I really enjoy this time with my team because it brings us closer together and helps relieve any stress that has built up throughout the day .

Tell us one quirky thing nobody would know about you.
Despite my love for hospitality and food, underneath I am a huge Math nerd. Accountancy has become my new found love and I find myself just doing math problems in my spare time. I’m also striving to someday become a Chartered Accountant .
